Gables Bites: What’s Cooking at Diane’s Kitchen?

Something fresh is coming soon to the Gables: Diane’s Kitchen, a breakfast and lunch eatery with European flair. While it’s true that the namesake chef, Diane Thuret, is French, she says you can expect a wide range of cuisines represented.

“You’ll find a new menu everyday,” says the chef who worked at a Michelin-rated restaurant in London. “I cook everything myself. No preservatives.”

Each morning, passersby will undoubtedly be seduced by the scent of fresh-baked muffins and smoky bacon on the grill. Once inside, they’ll find smoothies, juices and coffee, too, listed on the blackboard walls. Lunch offerings in this casual, yet chic spot will include an array of sandwiches, wraps and salads assembled à la minute, along with quiches and vegetarian entrees, like quinoa salad. A selection of decadent desserts will also be available, ranging from cookies and cakes to mousses. Another great feature will be her selection of prepared takeaway meals, most likely available until 5 p.m. “On Monday it could be beef lasagna, Moroccan chicken and herbed couscous on Tuesday, salmon teriyaki and coconut rice on Wednesday… a nice kedgeree (a British dish) on Saturday…” she predicts.

Residents of Coral Gables and parents of two-year-old twins, one boy and one girl, Diane and her husband, David, are excited to open a family-friendly breakfast and lunch spot in their neighborhood. Though Diane cooked for years in London this is the first restaurant she will be calling her own.

While she awaits the final approval from the city, Thuret can be found offering samples at the Coral Gables Farmer’s Market and soon at Fairchild’s International Chocolate Festival, and she teaches cooking classes at the Biltmore Culinary Academy and Williams-Sonoma. In the near future, she expects to host cooking classes at the restaurant after hours, too.
